Thomas Keller’s Strawberry Coulis

Ingredients
  

  • 3 cups strawberries hulled and quarterd
  • granulated sugar ΒΌ cup + 2 tablespoons
  • 2 tbsp water

Instructions
 

  • Combine all the ingredients in a medium saucepan, bring to a boil over medium heat, and cook until the berries are soft, about 4 minutes.
  • Remove from the heat, pour into a Vita-Mix, and puree, scraping down the sides as necessary. Strain through a fine-mesh conical strainer and refrigerate in a covered container for up to 3 days.
