El Rancho Mississippi Caviar

Ingredients
  

  • 1 can black eyed peas
  • 1 can white beans
  • 2 roma tomatoes small dice
  • 1 green bell pepper small dice
  • ½ jalapeno or fresno chili small dice
  • 1 advocado small dice
  • scallions sliced thin
  • ¼ cup Italian salad dressing (add more to taste)
  • salt and pepper to taste

Instructions
 

  • Drain and rinse beans
  • Combine all ingredients (except dressing) into a bowel. Add in salad dressing, mixing well and salt and pepper to taste.
  • Let sit in refrigerator for 1 hour before serving (can be served at room temperature).
