El Rancho Mississippi Caviar
Ingredients
- 1 can black eyed peas
- 1 can white beans
- 2 roma tomatoes small dice
- 1 green bell pepper small dice
- ½ jalapeno or fresno chili small dice
- 1 advocado small dice
- scallions sliced thin
- ¼ cup Italian salad dressing (add more to taste)
- salt and pepper to taste
Instructions
- Drain and rinse beans
- Combine all ingredients (except dressing) into a bowel. Add in salad dressing, mixing well and salt and pepper to taste.
- Let sit in refrigerator for 1 hour before serving (can be served at room temperature).
